The perfect pie for a cold winter day: Icon Almond-Cherry Pie

Icon Almond-Cherry Pie

2 cups frozen sour cherries
1 cup slivered almonds
1/3 cup white flour
½ cup white sugar
¼ teaspoon salt
2 large eggs
1 cup half-and-half
2 tablespoons brown sugar
2 tablespoons unsalted butter
1 teaspoon vanilla extract
¼ teaspoon almond extract
1 pie shell

On a recent Sunday afternoon we took a “Dense Cherry-Almond Coffeecake Pie” recipe from one of our favorite pie cookbooks and modified it to the Icon’s taste. That means we used lots less sugar, substituted half-and-half in place of full-fat sour cream and used only two eggs.

The pipes are calling - Steve Johnson can make your St. Patrick's Day celebration one to remember

Steve Johnson of Ada is ready to make your St. Patrick’s Day celebration one to remember.

He is scheduling appearances for the St. Patrick’s weekend – this year’s St. P. Day falls on Monday, March 17 – and will perform on the bagpipes.

Johnson has been bagpipping for about four years.

“I started out as a drummer of the bagpipe band at the University of Notre Dame,” he told The Icon. “Then, later I became a piper for the band.”

He’ll perform in an authentic sold saffron color quilt. That’s because he’s of Irish descent and the traditional Irish kilt is actually a solid color rather than the tartan kilts of Scotland.
